咸蛋虾 Salted Egg Yolk Prawns

材料 :
虾 300g
咸蛋黄-4粒 (份量取决于虾的份量)
咖喱叶-20-30片 
白兰他Plantan牛油-2汤匙
淡奶150毫升

腌料
幼糖-1茶匙
胡椒粉-少许
粟粉(太白粉)-1汤匙

Ingredients :
Prawns Fish- 300g
Salted egg yolk - 4 nos.
Curry leaves - 20-30 leafs.
Plantan - 2 tablespoons
Evaporated milk - 150 ml

Marinade :
Caster sugar - 1 Teaspoon
Pepper- to taste 
Corn flour - 1 tablespoon

做法:

1.预先将切碎的咸蛋黄蒸熟。
Pre-steamed pieces salted egg yolk. 

2.首先处理虾,鲜虾剪去虾须和尖刺,在虾背处横划一刀,挑去虾肠,洗净沥干水。 
To devein a prawn, use a small sharp knife to make a slit along the middle of the back to expose the dark vein, wash and drain water.

3.将腌料加入虾腌半个小时。
To marinate the prawn with marinade ingredients for half an hour.

4.然后才烧热油锅, 将虾过油,当虾身呈微红后,就可以捞出及沥乾油份。Heat the wok with oil, put in the prawn, fried till turn into slightly red, then remove and drain the oil.

5.把炸油全倒出,放入Plantan牛油,炸香咸蛋黄和咖喱叶,炒至起泡泡后,把鱼肉放入锅內兜炒均匀后,再加入生奶煮滚,即上桌啦! 
Remove all the oil, then use the same wok by put in Planta butter, egg yolk and fried curry leaves, fry till starting bubble, add in the prawn fry evenly, then add Evaporated milk and bring to boil, and serve it!

小提醒 Tips
如果想要加点辣,你也可以添加小辣椒chili padi。
You may add in chili padi, if you want more spicy, I omitted it because of 恩恩. ^_^

可是这次没有採到咖哩叶,所以没加。
Could not find any curry leaves so also miss out. ^_^

奶油可用白兰他面包油 (Planta) ,植物牛油(Margarine)或 牛油(Butter)都没有问题。
You may use Planta, Margarine or Butter to cook this dish.
