【中英食谱】咸蛋鱼片 Salted Egg Fish Fillet

我很喜欢带有牛油香及咸蛋碎口感的任何一种菜肴,无论咸蛋蝦、咸蛋南瓜、咸蛋瀨尿虾、咸蛋sotong咸蛋蟹等都非常可口,搭配上咖哩叶能营造更独特的口感,而今天晚餐就烹煮咸蛋鱼片吧!
I like ALL kind of Salted Egg Dishes, love the aroma and taste of butter with salted egg yolk.  Today I'm cooking Salted Egg Fish Fillet for dinner.

材料 :
鱼肉400g- 切厚片
咸蛋黄-3粒
咖喱叶-20-30片
白兰他Plantan牛油-2汤匙
淡奶100毫升
面粉-适量

腌料
幼糖-1茶匙
麻油-1茶匙
盐-少许
鸡蛋-1粒
Ingredients :
Fish Fillet - 400g (cut into thick slices)
Salted egg yolk - 3 nos.
Curry leaves - 20-30 leafs.
Plantan - 2 tablespoons
Evaporated milk - 100 ml
Flour - to coat the Fillet

Marinade :
Caster sugar - 1 Teaspoon
Sesame oil - 1 Teaspoon
Salt - to taste
Eggs -1

做法:

1.预先蒸熟咸蛋黄並切小片,也可压碎。Pre-steamed egg yolk and cut into small pieces, or can also be crushed.


2.将鱼片加入腌料腌半个小时。Use Mix the marinade ingredients to marinate the fish for half an hour.
3.鱼片沾上面粉,记得除掉多余的粉 鱼放进锅里炸,炸至金黄色。Coated the Fish Fillets with flour, remember to remove excess flour before put into the wok, fry until golden brown.
4.把炸油全倒出,放入Plantan牛油,炸香咸蛋黄和咖喱叶,炒至起泡泡后,把鱼肉放入锅內兜炒均匀后,再加入生奶煮滚,即上桌啦! Remove all the oil, then use the same wok by put in Plantan butter, egg yolk and fried curry leaves, fry till starting bubble, add in the fish fillet, fry evenly, then add Evaporated milk and bring to boil, and serve it!

如果想要加点辣,你也可以添加小辣椒chili padi,我省略了,因为恩恩。^_^
You may add in chili padi, if you want more spicy, I omitted it because of 恩恩. ^_^
